POSOLE
2 cups dry posole
2 qts water (8 c)
1 lb lean pork (I use pork chops)
1 lime
4 dry red chile pods
3 cloves garlic
1/4 teas oregano
2 teas salt
1/8 teas cumin
1 T red chile powder (optional)
green chile (if you're also making chile
rellenos and you have some freshly roasted
green chiles that have torn or are not big
enough for stuffing, this is the perfect
use for them. Chop and add to the Posole)
